ITALIAN RED WINES


The Chianti Story
The general formula for Chianti was famously established at the Brolio Castle by Baron Ricasoli. As long ago as 1872 he distinguished between two forms of the wine: a simple one for drinking young and a more ambitious one aimed for cellaring.

Today there is a marked distinction between the two styles. A wine labeled Chianti is normally a tangy, ultra digestible mouth full of fruit ready for drinking. Chianti Classico Riserva is an extremely serious wine made from low-cropped top quality sangiovese vines then aged in wood.

There are six sub zones in the Chianti region, they are Classico, Colliaretini, Colli Fiorentini, Colli Senesi, Montespertoli and Ruffina. If a wine is labeled with just Chianti it could be anywhere in the Chianti region as long as the producer is using the required grapes. If the wine has a sub zone labeled after the Chianti it must be from that appellation.

Chainti is probably the best wine to pair with most of Clyde Canino's Menu Choices. Ask your server for the best wine selection to pair with your meal.
